The uncinate process of the pancreas is a small, hook-like projection extending from the pancreatic head in human. IN domestic animals, it is mainly distinct in ruminant and horses : it curves medially and dorsally, often lying beneath the body of the pancreas and wrapping around adjacent vascular structures, particularly the cranial mesenteric artery and vein in some species.

Its prominence and relationships vary among species:

  • In dogs and cats, the uncinate process is present but not as prominent.

  • In ruminants and horses, it is less distinct.

  • In pigs, it can be more pronounced.
